Mix the soy sauce, honey, jerk seasoning and the salt and pepper together.
Cut and score chicken to allow the chicken to absorb maximum flavour.
Rub the seasoning mix all over the chicken and marinate for a minimum of 24 hours or maximum of 3 days, by placing into the refrigerator.
Set your oven at 180 °C. Place the chicken in the tray, cover with foil and bake covered for 40 minutes. Take off the foil and bake for further 15 mins to brown.
